Our Corazón Rosé is a serendipitous byproduct of our flagship Cabernet Sauvignon. Juice, "bled" as the grapes were crushed, was fermented in small French oak barrels to total dryness. Aging in barrel on primary yeast lees for six months gave this rosé a creamy mouthfeel, breadth and gravitas.

The jewel-like, pale salmon color is a delight to the eye. Aromas, including dried rose petals, jump out of the glass. Bright and rich at the same time, complex flavors include Bing cherry, red currant and plum. Snappy acidity keeps it lively.

After a discussion with the sommelier who negotiated a settlement between my wife's bias toward white and mine for red, we chose a rather unusual bottle: a rosé of cabernet sauvignon from the winemaker Cathy Corison, who founded her St. Helena-based winery in 1987. Pale pink and persistently zingy, it would hold its own throughout the extravaganza that lay in wait.   Nick Czap, December 14, 2017
